Who among us isn't a fan of the humble sausage roll?
Warm, delicious, mushy, and wholesome, the sausage roll has been delighting the masses for decades now. The only issue is that it's not suitable for vegans.
Well, it didn't used to be - that was until restaurants and delis realised that some vegans enjoy all of the same things that meat eaters enjoy. Just without the meat, obviously.
But if you can't be bothered hitting up your local shop - or you simply feel like getting creative today - why not make your own tasty vegan sausage pastry lads?
(*You will need some sort of food processor for this recipe. And yeah, alright, there are a lot of ingredients, but it's worth it okay?)
You'll need (serves 8):
- 1 roll puff pastry (the vegan kind)
- 250g mushrooms (chopped)
- 1 leek (chopped)
- 1/2 red onion (chopped)
- 4 cloves garlic (crushed)
- 3 tbsp Dijon mustard
- 100g panko breadcrumbs
- Handful walnuts (chopped)
- 1tbsp sage
- 1tbsp chilli powder
- 1tbsp pepper
- 1tsp salt
Method:
1. Preheat your oven to 200c. Add mushroom to the food processor and blend until chopped finely. Heat a pan over a medium heat and fry up your chopped leak, onion, chilli powder, and salt.
2. Add the pulsed mushrooms to the pan and fry for a further five minutes until soft. Add the mustard, garlic, sage, and pepper and continue to fry for a few minutes. Remove from the heat and allow to cool for a few minutes before combining with the breadcrumbs and walnuts.
3. Roll out the pastry sheet and spoon the mushroom mixture along the middle of the sheet. Roll up both sides and secure at the top so it doesn't unravel.
4. Cut into eight equal parts and place on a lined baking tray. Bake for 20-25 minutes, or until golden brown.
