Salad season has begun. Yay for raw nutrients. Nay for bowls of tasteless, sad-looking leaves that leave you starving an hour later.
Enter this light but seriously yummy summer salad – perfect for lunch or to accompany grilled meat or fish for a lighter dinner. It’s also spot-on for for a meal with a gal-pal. Add a crisp glass of white wine for a perfect meal. Then all you need is some goss and plenty of chats!
This recipe makes 4 portions.
Ingredients
150 g fresh baby spinach
12 cocktail tomatoes
1 small red onion
100 g black olives
100 g feta cheese
100 g serrano or parma ham
Dressing
½ red chilli in small cubes
2 tbsp olive oil
juice of ½ lime
1 tbsp Siúcra Light Golden Brown Sugar
1 tbsp balsamic vinegar
½ tsp coarsely ground black pepper
2 pinches salt
- Mix chilli, olive oil, lime, brown sugar, balsamic vinegar, pepper and salt.
- Wash the spinach and distribute onto four plates.
- Wash and halve the tomatoes. Peel the onion and cut into slices.
- Place the olives, tomatoes and onion on top of the spinach.
- Crumble the feta over the salad and place the ham around the edge.
- Serve with the dressing and bread.
