3 gorgeous new cookbooks that will inspire you to live and eat healthier

Summer is the perfect time to reset your eating habits.

Trine Jensen-Burke

Spring and summer is the perfect time to reset your diet and adopt some healthier new habits.

And if you are looking for inspiration for spring-cleaning your eating and live your best, full, healthy – and happy – life, these three newly released cookbooks are packed with ideas, advice and many, many flavorful, nutritious recipes.

1. Eat Happy (Melissa Hemsley)

I have been a fan of the Hemsely sisters and their easy and delicious take on eating better. In this new book, Melissa Hemsley shares collection of 120 healthy-but-thrifty meals designed to save you both time and money.

The food is colourful and vibrant, with foods that are easy to make and built around accessible ingredients available from your local supermarket.

The recipes are easy enough for even amature cooks to master, and there is something in the book for everyone, with vegan, vegetarian and pescatarian options, as well as a selection of meat dishes too.

2. The Happy Pear Recipes for Happiness

Our favourite Irish healthy eating duo is back, and this time with a cookbook that is, if possible, even more gorgeous and tempting than their last one.

The Happy Pear Recipes for Happiness is packed with quick and easy veggie options, clever meat-free versions of popular favourites and inspiring advice on how to be healthier. And being busy dads themselves, David and Stephen Flynn know the pressure of getting delicious healthy meals on the table every day, which is no doubt why they included a huge section of economical easy dinners that can be rustled up in 15 minutes or less.

Oh, and if you are wondering which dish to cook first, the Greek summer stew is nothing short of amazing, and will even have die-hard carnivors begging for seconds.
