These 3-ingredient blueberry pancakes are just what weekends were made for

What can be more perfect for a leisurely breakfast than pancakes?!

We hear ya. And the good news? These ones are both healthy AND easy to throw together (which means you could even make a batch should you wish to make the rest of the week a little more special).

All you need for these yummy little treats are:

4-5 bananas

6-7 eggs

3 handfuls of blueberries

(Recipe serves approx. four people)

How to make the pancakes:

1 .Mix the banana and egg together in a blender.

2  Heat a little coconut oil in your cast iron or griddle pan.

3. Pour your banana and egg mixture onto your pan in the shape of a traditional pancake.

4. Place a few blueberries in the middle of each pancake.

5.  Flip pancake when the bottom is light brown and solid.

6.  Cook the other side until light brown and solid.

7.  Remove from heat and serve.

Options:

Try adding cinnamon, vanilla or any other fruit you fancy.

Easy. Peasy. Blueberry squeezy.
