4 delicious (and super-healthy) veggie-based smoothies to try now

Trine Jensen-Burke

If you are looking for a healthy way to start your day, you can’t beat (beet, bahaha!) a smoothie. Especially ones that have both veggies and some protein added in.

And because variety is the spice of life (and because salads aren’t all that  appealing at 7.30am), here are four different smoothies you can toss together in the mornings.

All you do is blend the vegetables well with a little water in a food processor and then freeze into ice cubes. SO easy!

Spinach, kale, carrots (with a handful of unsweetened coconut flakes tossed in), and beets are all great bases for smoothies. For bananas and avocados, you can simply remove the peels, cube, and then freeze in a ziplock bag. By freezing fruit and veggies you can put your smoothie together in a snap in the mornings. Also, it’s a great way of ensuring your produce doesn’t go off, meaning it will save you money too.

1. Beet and Berry Smoothie

Blend together 2 cups fresh or frozen strawberries 1 cup fresh or frozen raspberries, 1/2 to 1 scoop vanilla flavored protein powder, 1 apple, cored and cut into quarters 1/4 cup frozen cubes of beets, 1 cup coconut water or 100% apple juice (unsweetened). You can substitute coconut water for almond milk if you want a slightly creamier smoothie.

Let this blend on high for a couple minutes so the smoothie gets well mixed.

2. Spinach, Peanut Butter and Banana

To make this one you’ll need: 1/2 frozen banana, 2-3 frozen cubes of spinach, 1/2 to 1 scoop vanilla flavored protein powder, creamy peanut butter and 8 oz. almond milk. Blend well.

3. Chocolate Avocado

This is SO creamy, it will make you think you are drinking a chocolate milkshake! Simply blend together: 1-2 frozen avocados, 1/2 to 1 scoop chocolate flavored protein powder, and 8 oz. almond milk.

Avocados are so good for you and they make smoothies super creamy. If you’re not a fan of bananas, you can use frozen avocados instead in the last recipe too. Or the other way around.

4. Carrot, Coconut, and Orange

This one is super light and bright tasting. It’s almost like a juice, but you don’t need a juicer. All you do is blend together: 2-3 cubes of frozen carrot/coconut, juice from 2 oranges, and 1/2 to 1 scoop of vanilla flavored protein powder. Grate in some ginger for an extra health- and flavor boost. Blend well!
