With the sudden chill in the air this week, I have started to switch up my breakfast habits again.
During the summer months, I will often just throw together a smoothie or simply just grace on some fresh fruit for breakfast, but being a creature of comfort – and habit – once the weather turns more autumny again, I am all about creamy, comforting porridge for breakfast.
As for toppings, I must admit I am a bit of a traditionalist at heart, often just adding some cinnamon or chopped up banana and nuts.
However, to celebrate World Porridge Day today, Flahavan’s has teamed up with best selling cookbook author and blogger, Indy Power, to create a series of delicious and exotic porridge recipes, and having tasted this amazing Pineapple & Coconut Porridge, I think I am ready to leave my traditionalist ways behind.
Here is what Power had to say about her delicious Hawaii-inspired porridge:
This tropical breakfast is inspired by beautiful Hawaii. Every bite tastes like a tropical getaway, it’s such a gorgeous way to treat yourself in the morning and it only takes a few minutes to make.
Coconut Porridge with Pineapple
Serves 2
90g of Flahavan’s oats
200ml of water
200ml of unsweetened coconut milk
1 tablespoon of maple syrup
200g of pineapple
to serve: desiccated coconut, lime
Method
1. Add the oats, water, coconut milk and maple syrup to a small saucepan on medium heat.
2. Bring it up to a gentle simmer. Let it simmer for about 3 minutes until the oats are tender and plump.
3. While it’s simmering, peel and slice your pineapple.
4. Divide the coconut porridge between your bowls and serve with the pineapple and a sprinkling of desiccated coconut and lime zest.
