
This sauce will revolutionise your culinary world. No joke. It's great with chicken, meat, fish, pasta, even spread it on a sandwich to give the usual mayo/mustard combo a break.
5-ingredient Salsa verde
Serves 4
Ingredients:
2 cloves of garlic
1 cup of tightly packed parsley
1/2 a cup of olive oil (extra virgin)
1 tablespoon capers
Juice of 1 lemon
Salt and pepper to taste
Directions:
1 Place all the ingredients in the food processor and blend until smooth and well combined.
2 Check the seasoning and add salt and freshly ground black pepper to taste. Done.
Variations: If you want to get a bit fancier on this bad boy, add 1 teaspoon of dijon for a bit more kick, or a couple of anchovy fillets for an even richer, savoury flavour.
NOTE: You can freeze the salsa verde but always thaw at room temperature never in the microwave as this will impact on the flavour and cause the herbs to brown.
