Here are three quick, no-fuss, super-healthy treats to get you over that mid-week hump…
1. Almond strawberry chia seed pudding
Serves 4
- 2 cups of strawberries
- 2 cups of almond milk
- 1/2 cup of chia seeds
- 1 teaspoon of vanilla extract
- 3 tablespoons of honey
Whizz the strawberries, almond milk, vanilla extract and honey in a blender until smooth. Put into a bowl and stir in the chia seeds. Cover and leave to set in the fridge for around four hours before serving in glasses.
2. Avocado vanilla pudding

Serves two
- 1 avocado
- 3 tablespoons of honey
- 1 teaspoon of chia seeds
- 1 cup of almond milk
- 2 teaspoons of vanilla extract
Place the avocado, honey, chia seeds and vanilla extract in a blender. Continue to blend, while slowly adding the almond milk, until the pudding reaches a creamy consistence. Divide and put in fridge for 30 minutes before serving.
