The 4-Ingredient Low-Carb Microwave Muffin That Feels Like Bread

Every since the weight-watching world went wild for Cloud Bread, tasty low-carb alternatives to diet-unfriendly favourites have been a hot topic. 

Our latest find is the One Minute Flax Muffin, a delicious, hearty little delight that can be topped with butter, melted cheese or egg mayo for a tasty, low-carb snack.

It’s also delicious dunked in soup, plus you can make a sweet or savoury version – the former of which is divine spread with cream cheese and sugar-free raspberry jam.

The best part? The whole muffins contains just 214 calories and 2g net carbohydrate. As an added bonus, flaxseed (also known as linseed) is one of the richest sources of plant-based omega-3 fatty acid in the world. It’s also high in fibre and vitamin B, which can help improve acne and eczema and studies even suggest that regular consumption of flaxseed could even reduce the risk of breast cancer.

All you need for the basic muffin is these ingredients:

  • 3 Tbsp Ground Flax seed
  • 1 tsp melted coconut or olive oil
  • 1 tsp baking powder
  • 1 egg

And to make it? Simple: Mix everything together in a mug, then microwave on a high setting for 60 seconds. Your fresh muffin should tip easily out of the mug onto a plate.

Experiment with the flavour by adding a spoon of stevia or half a teaspoon of cinnamon, some dark chocolate chips or a handful of fresh berries to mix before microwaving.
