Knowing what to eat for breakfast can be a struggle. You want something quick and easy yet tasty. You also want to make sure it’s a balanced breakfast to get you to lunchtime.
Trying to find a breakfast food that ticks all the boxes can sometimes feel like an impossible task. If you’re on the hunt for something new to wake up your taste buds, author and multi-award-winning food writer Lilly Higgins has you covered.
In The Simplicity and Versatility of Natural Yogurt, Lilly sets out to show us all of her favourite recipes which use something we all have in the fridge: natural Irish yogurt.
Yogurt is one of the most unsung heroes when it comes to its usefulness in the kitchen. This tasty ingredient is so much more than a handy lunchtime snack.
It can be used in everything from breakfast to desserts, making it a core staple in the diets of many.
Not only is yogurt a delicious snack and useful ingredient, but Irish dairy farming has a legacy spanning 6,000 years and remains a key part of Ireland’s rich food culture.
Ireland’s delicious natural yogurt is produced thanks to the commitment of Irish dairy farmers who produce high-quality milk from grass-fed cows.
Ireland’s grass-based dairy system sees cows graze outdoors up to 300 days per year, allowing for naturally nutritious milk to be produced. * This is a key step to why Irish yogurt is so delicious; it’s made with love and care.
Irish yogurt is not only part of a healthy, balanced diet, but buying it also supports local farmers, innovation and communities.
In the first instalment of this series, Lilly takes us through breakfast, where she makes yogurt-based breakfast pods.
These yogurt pods are packed with ground nuts, seeds and raspberries, providing a combination that will keep you going throughout the day.
Without further ado, let’s dive into how to create this delicious breakfast.
Yogurt Pots with Ground Nuts, Seeds & Raspberries - Makes 4
Ingredients
150g frozen or fresh raspberries
1 tbsp honey
480g Natural Irish Yogurt
1 tbsp each of linseed, sunflower seeds, chia, pumpkin seeds, hazelnuts, and cacao nibs
1 tsp cinnamon
Method:
Mash the raspberries (defrosted or fresh) with the honey and add a spoonful to the base of each bowl or glass.
Place the nuts, seeds, cacao nibs and cinnamon into a high-speed mixer and blitz until slightly grainy, like coffee grounds.
Stir the mixture through the yogurt, divide between four bowls, then chill for one hour or overnight.
It’s that simple!
So, whether you’re looking for a new breakfast or if you’re looking for a healthier option, this recipe is perfect!
