3 delicious recipes to make with all your Christmas leftovers

Hello Twixmas.

You know – those strange days in between Christmas and New Year’s where you have completely lost track of time, don’t know what day it is and find yourself wondering what the heck to do with all your Christmas leftovers that have taken over your fridge.

Well, fear not. We got in touch with the brilliant people at Mash Direct, and they have come up with three mouthwatering recipes, using up all your Christmas leftovers. Meaning, of course, not only do you not have to leave the house to go shopping, but you’ll also save money and have less food waste over the festive season. In other words, a major win-win!

1. Christmas – Ham Leftover Bake (Serves 4)

Cook time – 40mins

Ingredients:

  • Mash Direct Roast Potatoes
  • Mash Direct Roasted Root Vegetables
  • 300g Leftover Ham
  • 200g Cheddar cheese
  • Half a bunch of spring onions
  • Spinach (1 large bag)
  • Chives (a small handful)
  • 4 Eggs
  • Salt & Pepper

Method:

  1. Preheat the oven to 190°C.
  2. If your Mash Direct Roast Potatoes & Roasted Root Vegetables are not cooked already, follow cooking instruction on back of packaging.
  3. Place Spinach in a heat proof bowl and cover with boiling water, leave for 1 minute and then drain in a colander. Once drained lightly pat dry with kitchen roll.
  4. Place Ham, Roast Potatoes, Roasted Root Vegetables, Spinach and Spring Onions in a baking dish and mix together.
  5. Crack eggs, grate cheese and chop Chives into a food processor, blitz until ingredients come together.
  6. Empty the contents of the food processor into the baking dish along with the other ingredients and give the dish one final light mix.
  7. Place the baking dish in the centre of the oven for 30-35 minutes.

2. Leftover Stacks

Cook time – 15-20mins

Ingredients:

  • 1 packet of Mash Direct Mashed Potato
  • 1 small onion
  • 6 Brussels Sprouts
  • 1 small egg (beaten)
  • Christmas Leftovers – we used Turkey, Ham, Stuffing, Cranberry Sauce and Pigs in Blankets

Method:

  1. Finely chop the onion and Brussel Sprouts. Fry in butter until softened and season with salt and pepper. Microwave the Mashed Potato according to packet instructions.
  2. In a large bowl, mix the Mashed Potato, onions and Brussel Sprouts. Season and add the beaten egg.
  3. Form pancake shapes with the potato mixture. Fry on a medium heat for about 4 – 6 minutes on each side or until lightly browned.
  4. Top with your leftovers. We added stuffing, turkey, cranberry sauce, more stuffing, ham and then a Pig in Blanket with a skewer to stabilise.

Serve and enjoy! Top with gravy if you like!

3. Leftover Turkey and Potato Curry

Cook Time – 25 minutes

Ingredients:

  • Mash Direct Roast Potatoes
  • 300g Leftover turkey
  • 1 tbsp Sunflower oil
  • 1 Large onion
  • 1 Green pepper
  • 2 tbsp Curry paste
  • 2 Garlic cloves
  • 400g Chopped tomatoes
  • 2 tbsp Mango chutney
  • A small bunch of coriander
  • Rice or naan bread (to serve)

Method:

  1. Preheat the oven to 190°C.
  2. If your Mash Direct Roast Potatoes are not already cooked, follow cooking instruction on the back of packaging.
  3. Thickly slice onion and deseed & chop pepper.
  4. Heat the oil in a large pan over a fairly high heat. Cook the onion and pepper for 3-4 mins until starting to soften and brown slightly.
  5. Stir in the curry paste and garlic, then cook for another 1-2 mins.
  6. Add the chopped tomatoes and 150ml water.
  7. Bring to the boil and bubble for 5 mins.
  8. Turn the heat down, stir in the turkey and potatoes, and cook for another 2-3 mins.
  9. Season and add the mango chutney.
  10. Scatter with coriander and serve with rice or naan bread.
