Hands-up who wants to kick-off their day with a complete vitamin boost? Yep, we thought you’d all be waving your arms in the air. One of these in the morning will add an extra pep to your step, and it’s especially good for those starting a health kick this lent. It keeps you full all morning with slow energy-releasing oats and the lemon and ginger give an extra nutritional boost. You can even make it the night before, store it in your fridge and drink it en route to work or school drop-off in a travel mug.
Ingredients
Large handful of baby kale leaves
½ Avocado
Thumb-size chunk of ginger, peeled
10 blueberries – frozen
35g Oats (I use gluten-free)
1 Tbsp chia seeds
1 tsp Coconut oil
Juice of a small lemon
300ml Water approx.
Teaspoon honey (optional)
Directions:
1 Using a Nutribullet, or fast blender, put the kale leaves in first, then throw in the avocado, ginger, oats, chia seeds, coconut oil and pour in the lemon juice.
2 Fill with water to the ‘max’ mark, if you’re using a Nutribullet or add approximately 300ml water, you may want to add a bit more depending on the consistency you like.
3 Blitz for a minute or two.
4 Drink at once, or bring in a flask to enjoy on your commute or at your desk.
