Banana sushi is a fun way to get kids involved in making their own healthy snack

Back to school season is almost upon us, and with that, the constant afternoon hustle to come up with healthy-ish snacks to keep your kids from ‘dying of hunger’ (their words) before dinner is ready.

Enter banana sushi – the healthy(ish) new whole food snacks that we bet are going to be a win-win with both you and the kids.

The best bit? You can get the kids involved in making these – and get creative with toppings too.

Banana sushi is – luckily – a tad easier to make than regular sushi, and contains simply bananas, peanut butter (or other nut butter), and a chocolate with a high percentage of cacao (the darker, the better for you).

As for toppings, go to town with whatever your kids (and you) fancy. In these recipes, they have used pistachios, coconut flakes, and chia and sesame seeds for toppings, but you could easily use other smashed up nuts, even granola would work great.

Having made these with my own kids, I would recommend that you work with rather firm bananas, or put them in the fridge for half an hour before making the sushi.

We made up little stations with banana bites, then the next layer (peanut butter, almond butter, chocolate etc), and last, the station with the toppings. My children loved making these, and we have even had little friends over to make some with them too.

Note: Many schools are nut-free, so it might be better to leave these out of lunch boxes and use just for an after-school snack at home.
