Chicken one-pot wonders that will get you through the week

What is it about this time of the year that makes me want to cook stews and one-pot wonders?  

There is something so lovely about throwing everything into the one pot and like magic, it comes out delicious. It also frees up time to spend the day out and about or come home from work to the garlicky smell of real home-cooking. Here are some delicious (and easy!) slow-cooker recipes for all you chicken loving households.

1. Chicken Marsala

This creamy beauty is not only easy to make, but is also packed full of flavour. It’s also an easy one to hide plenty of veggies in for those fussy little eaters. This recipe takes ten minutes preparation time, six hours to cook, and it serves 4.

Ingredients

  • 4 chicken breasts
  • 2 teaspoons of minced garlic
  • 1 cup of sliced mushrooms
  • 1 cup of sweet Marsala or chicken stock
  • 1/2 a cup of water
  • 1/4 cup of cornflour
  • Freshly chopped parsley

Instructions

Pop the chicken, mushrooms, marsala and garlic into the slow cooker for 6 hours on low. Remove the chicken pieces with a fork and set aside. Whisk together the cornflour and water until it is dissolved. Pour into the slow cooker and stir. Put the chicken pack in and turn on high. Cover for another 20 minutes until the sauce is slightly thicker. Season to taste. Add the parsley and serve!

2. Thai Peanut Chicken

You will go nuts over this bad boy! This is a moist and flavoursome chicken dish you will end up adding to your family meal chart. It’s a quick recipe from ingredients you can usually find in your cupboard. Add the fresh chicken and poof…perfect family dinner. This recipe is also dairy-free. Prep time is 5 minutes and cook time is 4 hours on low. This serves 6 people.

Ingredients

  • 5 chicken breasts cut into chunks
  • 1/3 cup corn flour
  • 1 can coconut milk
  • 3/4 cup smooth peanut butter
  • 1/4 cup of soy sauce
  • 1/4 cup of honey
  • 2 tablespoons of lime
  • 1 teaspoon of ground ginger
  • 2 garlic cloves

Instructions

Cover the chicken pieces in cornflour and season then add to the slow cooker. In a separate bowl add the coconut milk, peanut butter, soy sauce, honey, garlic and lime juice and whisk and then pour over the chick in the slow cooker. Cook on low for 4 hours. Serve with some rice and garnish the chicken with chopped spring onions and peanuts for added omph.

3. Chicken Parmesan Pasta

This one has comfort food written all over it for those dark evenings when all you want to do is curl up on the couch and pretend you are Italian. Perfect for freezing too. This recipe serves 8; it takes 15 minutes to prep, and you can cook it for 4 hours.

Ingredients

  • 4 chicken breasts
  • 2 cans of chopped tomatoes
  • 1 onion, diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 packet of penne pasta
  • 1 1/2 cups of shredded mozzarella
  • Fresh parsley leaves

Instructions

Season the chicken and place in the slow cooker. In a bowl combine the tomatoes, onion, basil, oregano and parsley. Stir gently and toss into the slow-cooker. Cook on low for 4 hours. Remove the chicken and shred using two forks. In a pot cook the penne in salted water and drain. Stir the chicken and pasta into the slow-cooker and add the cheese for another 20 minutes. Serve with torn fresh parsley leaves.
