Halloween at home: Spooktacularly delicious recipes to make with the kids

We reckon that won’t be the case anymore when you show them these spooktacularly good Halloween recipes from Mash Direct– and the best news? They are so easy to whip up in your own kitchen.

Because whatever Halloween may bring this year, one thing we can be sure of is the ghoulishly good feast that comes with the night itself.

From Mini Mummy Pizzas to Spooktacular Mash and Stuffed Jack-O-Lantern Peppers, Mash Direct’s frightfully fun Halloween recipes will put a smile on everyone’s face!

Chicken and broccoli bake

Ingredients

  • 1 packet of Mash Direct Broccoli with a Cheese Sauce
  • 450g dried penne pasta (use gluten free if desired)
  • 350g diced chicken pieces
  • 2 tbsp olive oil
  • 200g cream cheese with garlic and herbs
  • 50g red pesto
  • 100g mature cheddar cheese, grated
  • 1 slice white bread, processed into crumbs (use gluten-free if desired)
  • 2/3 cut out graveyard tortillas

Method

  1. Preheat oven to 175°C, 350°F, Gas Mark 4.
  2. Bring a large pan of salted water to the boil and add all the pasta. Return to the boil. Cook the pasta until ‘al dente’ for 7-10 minutes. Drain the pasta and set aside.
  3. Meantime, heat the oil in a large frying pan over medium heat. Cook the chicken pieces until they are lightly browned and are cooked through to the middle.
  4. Once the chicken is cooked, combine with the pasta in the pot.
  5. Add the cream cheese, red pesto and Mash Direct Broccoli with a Cheese Sauce. Stir the ingredients gently so as not to break up the broccoli florets until well combined.
  6. Pour the mixture into a deep casserole dish (roughly 30cm x 23cm). Top with grated cheese and the breadcrumbs.
  7. Place in the oven for 20 minutes until golden and crisp on top.
  8. Cut out tortillas into the shape of headstones and pop in the oven for 3 minutes to harden.

Mini Mummy Pizzas

Cook Time – 10-15mins

Ingredients

  • Mash Direct Potato Cakes
  • Pizza Sauce
  • Stuffed green olives (or whatever you fancy for the eyes!)
  • Mozzarella Cheese

Method

  1. Carefully slice the potato cakes in half.
  2. Scoop a teaspoon of pizza sauce onto each half of the potato cake and spread evenly.
  3. Place thin strips of mozzarella across the cakes in the style of a mummy (careful they will get wider in the oven).
  4. Add two slices of stuffed green olives to act as the eyes!
  5. Place in the oven at 200°C for 10-15 minutes.
  6. Serve & Enjoy!

Stuffed Jack-o-Lantern Peppers

Cook Time – 25mins

Ingredients

  • 4 large Orange Bell Peppers
  • 1 packet of Mash Direct Mashed Potato
  • Crumbled Bacon
  • 3 Chives
  • Grated Cheese
  • Sour Cream

Method

  1. Heat oven to 180 degrees ⁰c.
  2. Using a sharp knife, slice the top off each bell pepper horizontally. Set tops aside (do not discard!) and remove all seeds. Rinse the peppers and pat dry.
  3. Use a small knife, cut holes in the exterior of the peppers to make Jack-O Lantern faces. If the peppers don’t stand upright, use the knife to slice a small amount from the bottom.
  4. Lightly grease a small sheet pan. Arrange the peppers and lids on the pan and cook in the oven for 20 – 25 minutes, or until the peppers are cooked, but still firm. Remove peppers from the oven and allow to cool while you make the filling.

FOR THE FILLING:

  1. Cook the Mashed Potato according to package instructions.
  2. Add the bacon, sour cream, cheese and chives. Mix gently to combine. Add salt and pepper to taste. Scoop the potato mixture into the peppers evenly.
  3. Place a top onto each stuffed pepper and serve with a big jack-o-lantern smile!
