OK, admit it: those Easter eggs aren’t going to last a whole lot longer.

Neither yours nor the kids’. And it’s not just you. Keeping the whole household occupied and happy right now certainly means feeding them well but it also means more time for those little snacks throughout the day.

Yes, while we’re all relishing more family meals together around the table – over the last few weeks most Irish mums will admit they’re munching that bit more too (we knew it wasn’t just us!).

And while our social media might be increasingly full of tips and tricks to stop ’emotional eating’ (another round of buttered toast, anyone?), here at HerFamily it’s not something we’re worrying about too much.

Still, this weekend we’re definitely looking for a meal that’s a little healthier and a little lighter after all our extra munching over the Easter bank holiday.

Which is why we’re eyeing up this AMAZING roasted salmon darne recipe from Lidl.

Lidl also has monkfish, prawns, and melt-in-the-mouth scallops. In fact, we’re tempted to mix and match the lot to create a stunning seafood platter – served, of course, the Irish way with brown bread and lots of butter (well, no one said we were completely depriving ourselves!).

Delish.

We reckon the salmon would be ideal dished-up alongside gorgeous steamed greens, potatoes of your choice, and generous chunks of fresh lemon.

Roasted Salmon Darnes: serves two

Ingredients:

  • 2 salmon darnes
  • 2 tsp olive oil
  • Sea salt and freshly ground black pepper

Instructions:

  1. Preheat the oven to 200ºC/400ºF/gas 6.
  2. Line a small roasting tray with parchment paper. Place the salmon darnes onto the roasting tray, skin side down. Drizzle oil and then season with sea salt and cracked black pepper.
  3. Place in the preheated oven for 10-12 minutes until golden and cooked through. The flesh should easily flake apart.
