Avocado Eggs: A YUMMY Brunch That Packs A Healthy Punch

When it comes to nutrition, avocados are the holy grail. 

With more potassium than a banana, they’re also a source of lutein, a carotenoid that works to prevent eye disease and have been shown to lower cholesterol.

Half an avocado contains 138 calories and 14.1g fat, 3.4g of fibre to help you feel fuller for longer and a quarter of the recommended daily intake of heart-healthy folate, which helps prevent birth defects if you’re planning a family.

While you can eat them many ways, mixed into a tasty guacamole, chopped into a salad or added to a sandwich or wrap, this fun high-protein brunch recipe is by far our favourite… and the kids will go wild for it. Add some cheese and a splash of hot sauce and it’s also a mean hangover cure if you’ve overindulged.

Ingredients

  • 1 Avocado
  • 2 Eggs
  • Sea salt & pepper

Directions

  • Cut avocado in half, remove pit. If necessary scoop out some avocado to make room for egg.
  • Crack eggs into a bowl. Place yolk and some egg white (with a spoon) into the avocado’s hole.
  • Bake in oven at 200 degrees for 13-15 minutes.
