Hate the mid-week dinner rush as much as we do?

We feel you. There is nothing like realising on the way home from creche pick-up that you have nothing in the fridge and having to pull into Tesco with your over-tired toddlers in tow, or trying to prepare spaghetti bolognese while also overseeing homework or negotiating toy fights.

Yikes. It is HELL.

The solution? Meal prep, mamas. Take a little time on  Sunday to get your meals ready for the next five days, and you will mentally thank yourself all week long.

And while the whole concept of meal planning may sound a little hard to get going with, we pretty much guarantee that once you start, you won’t look back. And to get you started, we have rounded up five easy dinners you can prepare on a Sunday, meaning next week will be a total breeze:

1. One-Pan Italian Sausage with Veggies and Rice

This dish is so quick and easy to make and the veggie prep is fast! You can also easily customise it by adding in your favourite veggies, and use whatever sausage you like best or have handy.
