We still can't quite believe that Easter is here already. With everything else going on, it's kind of stuck up on us this year.
Well, we suppose we did have the kids reminding us that the Easter Bunny is coming - or asking if the Easter Bunny is allowed to leave his own house. Lucky for them, he's considered an essential worker so chocolate eggs will most definitely be arriving in our house this year.
One thing that completely skipped our minds though is Easter dinner. One of the most important dinners of the year, sure, but somehow we're just a few days away with nothing planned or bought.
Thank goodness for us (and all the other hungry tummies in our house), we found a delicious lamb leg recipe from Lidl that will suit us perfectly for the big day.

Lemon, Rosemary, and Salt-Crusted Lamb Leg
Ingredients:
Zest of 1 lemon
3 tbsp salt
2 springs rosemary, leaves removed
3 tbsp olive oil
Preparation:
1. Preheat oven to 180°C/350°F/gas 4.
2. Use a mortar and pestle to crush the lemon, salt, and rosemary until incorporated. Then stir the oil through.
3. Coat the lamb with your dressing.
4. Place the lamb in a large deep-sided oven tray along with the rest of the ingredients. Sprinkle with salt and black pepper.
5. Cook for 3 hours or as per guidelines on pack.
6. Ensure food is piping hot and cooked throughout before serving.
