Level up lunchtime with this easy, protein-packed bagel recipe

When it comes to lunchtime, we’re all guilty of recipe repeating.

While there’s nothing wrong with the sandwich you’ve been making for years or a simple pesto pasta salad, it’s also important to mix things up every once in a while. With that in mind, we’ve teamed up with the folks at Kerrygold to bring you a brand new recipe to add to your lunch time rotation.

This Egg in a Bagel recipe is not only super quick and easy to make, but it’s packed full of protein. What’s more, it delivers a moreish bite, keeping hunger at bay until dinnertime.

And the special ingredient? Kerrygold Spreadable. This rich, creamy spread is made from milk sourced from Irish farms, where cows graze on lush, green grass. As a result, that distinct Kerrygold taste is unmistakable, and it seriously elevates any meal.

Ready to brighten up lunchtime with this After School Snacks: Egg in a Bagel recipe? Here’s what you’ll need.

Ingredients

  • 45g Kerrygold Spreadable
  • 4 sesame bagels
  • 4 tbsp tomato relish
  • 200g sliced ham
  • 4 medium eggs
  • 1 ripe avocado, sliced
  • 50g of rocket

Method

  • Pre-heat the oven to 180c fan.
  • Start by toasting the bases of the bagels and then spread them with Kerrygold Spreadable. Top them off with relish and sliced ham.
  • Take your bagel tops and butter the cut side of them, then place them on a large baking sheet lined with parchment paper.
  • Carefully crack an egg into the hole of each bagel and put them in the oven for 15 minutes until the egg is set.
  • After 10 minutes, add the bases to the tray and continue cooking until the eggs are set.
  • Remove the bagels from the oven and add slices of avocado and rocket on top of the ham.
  • Carefully lift the egg tops onto the base and serve immediately.
