These Popcorn Balls Might Be The Most Delicious Diet-Friendly Snack Ever Created

You know how your stomach always seems to get a little yearning for something – anything – when you sit down at night and it’s finally time for a little TV and chill (actual chilling, that is!)

The problem is that a lot of these snacks we tend to reach for can be quite high in both calories, and also either salt or sugar. Neither of which are particularly great for our health and waistlines. (We’re are totally looking at you, Nutella toasties!)

Which is why we have now found a new favourite when it comes to the midnight munchies (or, you know, afternoon slump or whenever).

Enter popcorn balls, an utterly unique take on trail mix and popcorn.

Trust us, you’ll soon be as hooked as we are. And the good news is that these babies are the perfect healthy treat to stick into your kids’ lunch boxes the next day too. Win/win.

Ingredients

  • 5 cups, store bought kettle corn
  • 1/4 cup shelled sunflower seeds
  • 1 cup mini pretzel twists
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/2 teaspoon ground cinnamon
  • 1/2 honey

Directions

  1. In a large mixing bowl, combine all ingredients other than honey.
  2. Meanwhile, in a small saucepan over low heat, simmer the honey for about 1 minute and set aside.
  3. While the honey is still warm, toss with all ingredients in the large bowl using a rubber spatula.
  4. Place popcorn mixture in the freezer for about 10 minutes to allow the honey to set.
  5. Once the honey has firmed up, using greased hands, form the mixture into balls about 4 inches in diameter. Place the finished popcorn balls on waxed paper and store in a cool dry place before serving.
