10 minute, sugar-free, coconut protein bars

I never stop harping on about nuts, nut butter and coconut, but for good reason. They are the carbs you can eat without ballooning into Augustus Gloop. With these coconut protein bars, mid-week snacking will never be the same again. So get your hands dirty with this one and lick that spatula.

Coconut Protein Bars

Makes 12 bars.

Ingredients:

1 cup coconut flakes

2 cups almonds

1/2 cup almond/cashew/peanut butter

2/3 cup coconut oil

1 tbsp coconut/almond flour

1/2 tsp sea salt

1 1/2 tbsp manuka honey/agave syrup (or not, it’s up to you)

1 tbsp vanilla extract*

6 tbsp melted 80% dark chocolate

I fire in a handful of Goji berries if I have them too!

*TOP TIP I swapped the vanilla extract for a vanilla liqueur for a dinner party dessert option, and the results were legendary.

Directions:

1. Melt coconut oil in the microwave on low power.

2. Line a 9×9 baking pan with wax paper.

3. Pulse almonds in a food processor into coarse sand (a little more coarse than almond meal).

4. Add all ingredients EXCEPT the chocolate to the food processor and pulse until it forms a textured paste (you can play around with how coarse you like your mix to be).

5. Stir with a spoon for even distribution of nuts and pour into baking pan. Smooth out to the corners and place into the fridge for 1 hour.

6. To make the topping, melt chocolate on low heat in the microwave.  Drizzle it over the base evenly. Place the tray back in the fridge for exactly 5 minutes before cutting into squares. For variety, sometimes I top that layer with coconut too… sure why not?
