Your family will love this tasty Crumbed Salmon and Creamed Spinach recipe this Easter weekend

Occasions like Easter are more important than ever this year, and a great homecooked meal is at the centre of every celebration.

If you’re planning a delicious family feast, nothing tops Avonmore Cream this Easter.

We’ve got some mouth-watering Easter menu inspiration for you today with our heavenly Crumbed Salmon and Creamed Spinach, made with Avonmore Cream. This yummy dish is so easy to make, but we think your family will be seriously impressed.

Her’s Cassie Stokes has been busy in the kitchen, preparing this simple but delicious recipe for you to follow along with. Here’s what you’ll need…

Your ingredients…

  • 4 skinless salmon fillets
  • 300ml of Avonmore Double Cream
  • 500g fresh spinach
  • 50g of Avonmore Butter
  • 50g breadcrumbs
  • 30g porcini mushrooms
  • 4 bay leaves
  • ½ lemon, zested and juiced

Once your ingredients are good to go, you’re just five simple steps from an Easter meal that’ll serve four (very happy) people.

Step 1

Crush the bay leaves in a pestle and mortar and mix with the breadcrumbs and lemon zest.

Step 2

Put the spinach in a colander and pour boiled water over until it’s wilted. Rinse under cold water to cool and squeeze out the excess water.

Step 3

Bring the Avonmore Cream and mushrooms to the boil in a pan, and set aside.

Step 4

Time to combine it all. Spread out the wilted spinach on the base of a baking dish and pour the creamy mushroom mix on top. Lay the salmon down, rounded-side up and drizzle with lemon juice. Then simply scatter the breadcrumbs over, so each fillet is completely covered, and dot some Avonmore Butter over the salmon.

Step 5

Heat the oven to 200C/180C fan/gas 6 and bake for 30-35 mins until the fish is cooked through, the crumb is golden and the Avonmore Cream has bubbled into the spinach. Yum!
