How to make superfood fudge from The Happy Pear boys

Healthy fudge? They and stop us. This is our new obsession

Superfood and fudge don’t normal frequent the same sentence, but of course, The Happy Pear guys show us how it’s done.

You should be able to get all of these ingredients in the supermarket, with the exception of the date syrup, which is trickier to find, but can be picked up at any health food store. Failing that, use golden syrup.

These ingredients are not any more expensive than forking out for traditional baking things like flour, butter and sugar plus they’re a million times more healthy.

Making these with the kids will re-inforce healthy treat making, and the message that you don’t need refined sugar to make something a treat.

Ingredients:

  • 1 x 280g  jar light tahini

  • 3 tablespoons coconut oil

  • 120g date syrup

  • 1 teaspoon vanilla extract

  • Pinch of sea salt

  • 2 teaspoons of raw cocoa powder

  • 2 tablespoons goji berries

  • 4 tablespoons raw cocoa nibs – 3 in it and 1 for topping

Directions:

  • Melt the coconut oil

  • Add the coconut oil to all the rest of the ingredients in a bowl – mix really well

  • Pour into a containers with sides 1 so that the huge is 1 inch high

  • Leave to refrigerate for 4 hours
