The HONESTLY HEALTHY #slimdown: Carrot ‘noodles’ with avocado dressing

Natasha Corret's latest book is clean eating with serious flair

Katie Mythen-Lynch

In a world full of processed and sugar-dense food, gourmet vegetarian chef Natasha Corrett has created four cleansing recipe plans suitable for every occasion. Her new book Honestly Healthy Cleanse is a cookbook for food-lovers who want to look and feel fabulous. This week, we’re sharing four of the recipes on the #slimdown plan so you can try them at home.

On this recipe, her carrot noodles with avocado dressing, Natasha says: “This wonderfully cleansing dish is incredibly alkalising too –which is such a bonus! I love the creaminess of the avocado dressing here, it really transforms a few humble ingredients into a delicious meal.”

Serves 2

Ingredients

2–3 carrots, spiralised

2 ripe avocados, roughly chopped

juice of 1 lemon

1 tbsp sweet miso

1 small clove garlic, grated

a pinch of Himalayan pink salt

½ small red onion, finely chopped

15g coriander, chopped

40g pea shoots to garnish:

Tamari-toasted seeds

finely grated zest of 1 lime

1 tbsp pumpkin oil

Here’s how to make it:

Place the carrots in a bowl.

Put the avocados, lemon juice, sweet miso, garlic and salt in a blender and blend until completely smooth.

Pour this dressing over the carrot ‘noodles’ and mix in – using your hands is best I find – then stir in the red onion and coriander.

Divide the pea shoots between 2 plates, add a pile of the ‘noodles’ on top, garnish with the tamari-toasted pumpkin seeds and lime zest and drizzle the pumpkin oil all over.
