Dinner inspo: This iron-rich beef and broccoli is a midweek marvel

It’s Week Two of the HerFamily.ie 30 Day Bikini Body Blitz and by now you should be seeing some serious results.

Here at HQ, we are steadfastly following the plan to the letter, but we do find we need to keep meals interesting to stop boredom from setting in.

A hearty mix of iron-rich beef and healthy broccoli, which is also laden with Vitamin C to help your body absorb the iron, this tasty midweek meal is guaranteed to become a regular.

This recipe makes four servings. Pop any leftovers in a container to heat up at work for lunch.

INGREDIENTS

  • 2/3 cup soy sauce
  • 1/2 cup chicken stock
  • 1/4 cup honey
  • 2 tablespoons rice wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon Sriracha, or more, to taste
  • 1 teaspoon ground ginger
  • 1 teaspoon brown sugar
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1 pound flank steak, thinly sliced across the grain
  • 1 head broccoli, cut into florets

INSTRUCTIONS

  • In a medium bowl, whisk together soy sauce, chicken stock, honey, vinegar, garlic, sesame oil, brown sugar, Sriracha, ginger, red pepper flakes and 1/4 cup water; set aside.
  • Heat olive oil in a large skillet over medium high heat. Add steak and cook, flipping once, until browned, about 3-4 minutes. Stir in broccoli and soy sauce mixture until tender and slightly thickened, about 3-4 minutes.
  • Serve immediately.

This is delicious on its own or served with a cup of quinoa.
