Holly White’s recipe for crispy skin roast potatoes is a spud game-changer

You’ll never look at potatoes the same way again.

Potatoes are a staple of most Irish meals and we like them anyway we can have them. Mashed, roasted or fried, we love them all.

If like myself you love the humble spud you’re going to love this recipe from food blogger Holly White, which will turn your roasties from ordinary to extraordinary.

Holly’s Crispy skin-on roast potatoes Ingredients (serves 6):

• 1000g of white potatoes- Maris Piper are best
• Olive oil
• 1 clove of garlic

Method:

• Chop the potatoes into a semi uniform size to ensure even cooking.
Boil them with the clove of garlic in the pot for twenty minutes.
• After twenty minutes your potatoes will be ready. Strain them in a colander and allow them to drain for at least 2 minutes. The more moisture that’s removed the crispier they will get.
• Add the drained potatoes to a large oven tray, pour over about a tablespoon of olive oil and shake them in the tray to bash them up a bit and also coat them with oil. This creates lots of little crispy clusters.
• Halfway thorough take the tray out and turn the potatoes ensuring they get crispy on all sides.
• Remove them from the oven. Season with salt and pepper and serve immediately.
