Make This Flourless, Sugarless Banana Bread (While You Still Can)

Katie Mythen-Lynch

The news that the fail safe fruit, post-gym treat and portable kid snack could be under threat has hit us all hard here at HerFamily HQ.
There’s only one thing for it: enjoy the yellow stuff while you still can. This banana bread is so moist and sweet that no added sugar is needed.
It’s literally the easiest recipe for the tea-time favourite we have ever come across, and it takes less than fifteen minutes to prepare. Sweet in every way.

Easy-breezy Banana bread

Freshly baked homemade banana bread with pumpkin and pecan.

Serves: 12 squares

Ingredients

1 1/2 cups of chopped walnuts

1/3 cup of almond butter

Three bananas

One teaspoon natural vanilla extract

One teaspoon baking soda

One egg

Tip: If you are sceptical of what ‘flourless’ will taste like then simply add a cup of cooked quinoa  to the mixture.

What to do

1. In your food processor/blender pulverise your walnuts until they turn into a buttery texture.

2. Add the almond butter and mix more. Add bananas, vanilla, baking soda and egg. Mix in the mixer until blended.  Line a 8×8 pan with parchment paper and pour mixture in the pan.

3. Bake at 350 degrees for 30 minutes.

4. Let cool before cutting into your banana bread. Enjoy. This is a recipe you will always love.
