Let me start by saying, I have made these, and they truly are the easiest and healthiest 2-ingredient cookies I have ever made. Not the mention, one of the most stress-free baking experience with lots of sticky, grabby fingers in the vicinity.

What you need
1 banana
3/4 cup shredded coconut
What you do
Pulse the ingredients together with a hand blender or in a food processor. Shape them into little discs. Pop them on a coconut-oil greased baking tray.
Cook for 25 minutes at 160 degrees fan over.
