Mug Cake: The fuss-free treat you can make in the microwave

The rise of the mug cake has our support.

Cooked in the microwave, it’s a great one to get the kids baking and all the ingredients can be found (hopefully) in the store cupboard. Once you have the basic recipe down you can try out any ingenious innovations that take your fancy.

 

Basic mug cake ingredients

4 tablespoons self-raising flour

4 tablespoons caster sugar

1 egg

3 tablespoons milk

3 tablespoons vegetable oil

1 tablespoon lemon juice

Zest of half a lemon

 

How to

1. In a large microwave-proof mug, combine the flour and the sugar.

2. Whisk in the egg, milk, oil and lemon juice to form a smooth batter.

3. Stir in the lemon zest and microwave on high for 4-5 minutes or until the cake has risen and is firm to the touch.

4. Top with a little raspberry coulis or fresh berries to serve.
