Barbecue Dessert: 5 Minute Rocky Road Banana Treats (Less Than 200 Calories)

Bananas have become a bizarrely integral part of my life since having The Child.

They are a highly portable snack food that fits perfectly in my son’s (and my) mouth, a saviour for when a hangry tantrum is escalating. They’re also kind of the bane of my life as I find them smushed into every single nook and crevice of my car, home and handbag. But hey, while the smushing (most recently into a bicycle helmet) was taking place there was a few minutes of blissful quiet (the scary kind, during which you know something’s up but you also know that whatever it is is not as important as getting a few more minutes of chill-time). Also with banana smushing comes hilarity… when The Man put the bicycle helmet on.

Bananas are also perfect for an after dinner treat, these rocky road baked bananas are the quickest, easiest dessert you’ll ever make for when that urge to splurge strikes.

Rocky Road Bananas

Makes 4.

Ingredients:

4 bananas

Approximately 40 miniature marshmallows

40g dark chocolate, broken into pieces

1 Crunchie, bashed up

Directions:

1. Using a sharp knife, carefully cut a 1 inch strip lengthways down the middle of each banana.

2. Leaving the banana inside the skin, cut it into 1 inch slices.

3. Divide the marshmallows, dark chocolate and Crunchie into four lots then stuff them into the bananas.

4. Using four squares of tinfoil, make little boat-shaped holders for the bananas and sprinkle any remaining filling over the top of each.

5. Add to a hot barbecue, close the lid and allow to cook until warmed through, about 5 minutes. The bananas can also be baked in the oven at 200°C for about five minutes or until the bananas are warmed through and the marshmallows are gooey and golden and the chocolate, melted.
