These vegan, gluten-free cookies require just four ingredients

Simple and delicious.

We adore baking but we’re a little lazy, which is why our absolute favourite recipes are those that call for just a couple of ingredients and very few steps.

Luckily, there are plenty of delicious things you can bake at home that are super easy to put together.

We’ve come across one for cookies that you and the family will love – and they only require four ingredients and minimal effort so your kids can get involved in making them without things going horribly wrong.

They’re also vegan and so are ideal if you’re cutting out animal products.

Blogger Elizabeth Barbone (who came up with the recipe) has christened them the ‘World’s Easiest Cookies’ and we can see why.

Feel free to add a handful of nuts, raisins or some chocolate chips to the mix.

 

Ingredients

  • 230g finely ground almond flour
  • 1/2 teaspoon baking powder
  • 100g dark maple syrup
  • 2 teaspoons vanilla extract

Method

  • Heat your oven to 350°F. Line a rimmed baking tray with baking paper.
  • Whisk the almond flour and baking powder together in a mixing bowl. Switch to a wooden spoon and stir in the maple syrup and vanilla. Stir until a sticky dough forms and holds together.
  • Drop rounded tablespoons of the dough onto the prepared baking sheet, about one inch apart. For crisp cookies, press down the dough lightly with the flat bottom of a drinking glass or measuring cup. (If the glass sticks to the dough, dip the bottom in water.) For softer cookies, don’t press down the dough.
  • Bake until the edges are golden brown, about 12 minutes. Allow the cookies to cool on the pan for about 3 minutes, then transfer them to a wire rack to cool completely.
