Instructions
Bring a large pot of water to the boil, and be generous with the salt in in. Italians claim you should always boil your pasta in water "as salt as the Mediterranian sea." Drop in the tagliatelle and cook for as many minute as the instructions on the packet tell you. Or a minute less, if you prerfer it to be proper 'al dente.'
As soon as you have added your pasta to the water, heat a skillet pan and melt your butter. While whisking, add the lemon juice and zest. Keep whisking.
When the timer for the pasta goes off, the lemon sauce should be hot. Drain your pasta (reserve a little of the water), then add pasta and your little bit of pasta water into the skillet of lemon sauce. Simmer for a minute, then add a generous helping of grated cheese and season with salt and pepper.
Serve.
